To Fry and Defy



A couple of years ago we had a powercut in the A.M. just as I wanted a Welsh Fr Up. Well there's as much chance of me getting a date with Dame Helen Mirren (although I still live in hope) as there is of me going without a cooked breakfast so what to do? Dig out the camping stove and fry of course!

Chicken Crumbs

So I bought a bag of chicken nuggets to use the meat in a vindaloo. (Its my lazy assed way of making a curry when I want a quick one knocked up). All I do is cook the nuggets, strip the breadcrumbs from the 'chicken' (im still not convinced its chicken) and use it in a vindaloo.
But WHAT THE F**K? Look at how much breadcrumb coating there is without the meat!? No wonder the folk who usually shovel this stuff down their necks have waists like double decker buses. Jeepers! Naturally there will be more coating on these foods but when you actually see it like this its quite shocking. Im glad I used the meat only, and binned the rest.

Napalm Death Scum Redux

In 1987 grindcore kings Napalm Death, unleashed the awesome Scum album onto the world. The world (especially the heavy metal bits of it) was staggered. It was LOUD and faster than a blue arsed fly on speed. I f**king loved it! Im playing From Enslavement To Obliteration (released not long after) as I type.
Feasts Of Metal bring thee great news. Scum is set to be re-released on limited-edition coloured vinyl LP (and CD) on March 5 via the super Earache Records. Get it in!!

Spam Fritters

I like Spam. I know it gets knocked around as 'World War II food' because of its popularity due to rationing in the 1940's but I care not. I like the stuff. And its versatile too because it will go with almost anything. Salads, chips, rice, eggs, you name it. I can't understand folk not liking Spam, afterall its only chopped pork shoulder meat & ham. Just add batter for fritters. Whats not to like?
as you can see, I cooked a few baked spuds to go with them and im happy to report it was a success. Huzzah! By the way those dollops of what look like butter on the potatoes, are not butter at all but Cheese spread. Added artery buster granted but its not like I cook this every day. Moderation.

A Crisp Sarnie

I used to munch on crisp sandwiches when I was a young mosher, and for some reason I started hankering after one last night. The result is in the photo above. Admittedly it looks a little plain thanks to the bright light I held it under for the picture, but rest assured it was fine.
But be warned! There are few rules to making these things. Granted these rules are not solid gold and you may ignore them, but don't come running to me if you end up with an unholy mess.

1. Medium bread is best.
2. Use butter not margarine and don't spread it too thick. And try to resist buttering both sides of bread.
3. Keep the cap on the ketchup, you'll only end up with an overload of clashing flavours. Trust me, ive tried it.
4. If using cheese as filler, GRATE IT!
5. Never crush the crisps so much that they resemble cigarette ash. Ruins it totally.

I used thin turkey slices in my sarnie with salt & vinegar crisps. A light spreading of butter, a few slices of meat before adding the crisps. Close the sandwich, press it down lightly so the crisps break but dont get mangled and voila! Serve and enjoy!

After being a customer for over five years now (and satisfied every time), I feel the time is right for me to dedicate an entire post to Farhin's Indian takeaway in Carmarthen, rather than giving them a mere mention in random articles. They deserve it, they really do. And if you happen to be in the area and fancy a curry, drop in and taste what im yakking on about. Those tastebuds will thank you.
You will find them in Priory street (opposite Lidl) and are open 5pm to 11pm monday to sunday.
Farhin's use fresh ingredients in their dishes and each is individually prepared, so the chefs are able to cook them to exact requirements should you have any. They are vegetarian friendly too with an extensive menu to suit everyone. Take it from me, this is a gem of a takeaway with a friendly service and wallet friendly prices. Im a fussy eater and if Farhin's can keep even me coming back every weekend, they are doing something great.
I usually have lamb vindaloo, special fried rice with chips & free poppadums and boy I wish I had their vindaloo recipe. Its always mouth wateringly good and I can honestly say ive never had a bad curry there. I can also recommend the milder lamb curry and chicken korma with mushroom rice. Very tasty.
Don't fancy a Balti meal? No problem as Farhin's also make great kebabs which are always handy on the way home from the pub. This place is one of the reasons im happy I moved to Carmarthen years ago because it beats the places I was used to in Burry Port hands down. If you happen to be a curry fan then you simply need to visit Farhin's. Im hungry now.

Pantera in Newport

The Pantera concert I saw at the Newport Center way back in September 1994 was one of the best moshing events ive been to. And ive been to quite a few! The metal world had recently been stunned by Kurt Cobain's suicide a few months earlier and this gig provided for much needed relief after the sad news.
The band had just released their Far Beyond Driven album, which was getting a LOT of play on my sound system at the time. Hey theres no faulting it, its a great f**king heavy record! And I was stoked to see them touring it. I would'nt spend a night in Newport for any old band. Laughs.
A cool thing I remember about this gig is while we were having a few drinks outside the venue, Pantera's head roadie Jeff 'Mayhem' Thompson came out and joined us Welsh headbangers for a bit. It added to what was a fantasic bloody night of good tunes and shredding guitar licks from Dimebag Darrell. I can't f**king believe these two awesome dudes are no longer with us. Such a b@stard shame.
And know this; to this very day I count myself not just lucky but BLESSED to have gotten to hear Dime play live. One of the best guitarists EVER!
Everyone had a blast in this gig, and I must have sweated the alcohol clean out of my system in the pits. (Don't worry, I put it all back in at the bar later). Ive seen some heavy bands in the Newport Center, including a brutal gig from Suicidal Tendancies, but I can safely say the Pantera guys DELIVERED the goods to Wales. F**king epic concert!
